How Pizza Dough Is Made: Fermentation to Fire
Great pizza dough isn't made — it's grown. The process starts 48 hours before the pizza hits the oven, and the most important ingredient isn't flour or water. It's time. Dough that's been properly fermented has a flavor, texture, and structure that no quick-rise method can replicate.
The Four Ingredients
Real pizza dough is four things: flour, water, salt, and yeast. That's it. No sugar, no oil, no milk, no eggs. The simplicity is the point — with only four ingredients, each one has to be right, and the process has to do the heavy lifting.
Flour: The Foundation
We use high-protein flour that develops strong gluten networks during fermentation. Italian 00 flour is the Neapolitan standard — it's finely milled and creates a soft, extensible dough that blisters in a hot oven. The protein content matters: too low and the dough tears, too high and it becomes chewy and tough.
Water: More Than a Solvent
Hydration ratio — the percentage of water relative to flour — determines the texture of the finished crust. We run about 65% hydration, which gives us a dough that's workable by hand but wet enough to create the open, airy crumb structure you see in wood-fired crusts. Higher hydration means bigger bubbles and a lighter crust.
48-Hour Fermentation
We mix our dough and let it ferment slowly in the cooler for a minimum of 48 hours. During that time, enzymes break down complex starches into sugars, yeast produces CO2 and flavor compounds, and the gluten relaxes into a stretchy, workable dough.
Why Fermentation Takes 48 Hours
A quick-rise dough can be ready in 2 hours. It'll make pizza. But it won't make good pizza. Fast fermentation produces CO2 for rise but skips the slow enzymatic breakdown that creates flavor. Under-fermented dough tastes bland, feels dense, and doesn't develop those beautiful blisters in the oven.
During a 48-hour cold ferment, the yeast works slowly, producing less gas but more flavor compounds — organic acids, alcohols, and esters that give the dough a complex, slightly tangy taste. The gluten also relaxes completely, making the dough easier to stretch without tearing.

- Hours 6-24: Slow fermentation in the cooler, enzymes break down starches into sugars
- Hours 24-48: Flavor compounds develop, gluten fully relaxes, dough becomes extensible and aromatic
Shortcuts don't belong in pizza dough. You can't rush fermentation any more than you can rush a good wine. Time is the ingredient you can't buy at the store.

We never use a rolling pin. Rolling compresses the gas bubbles that fermentation spent 48 hours creating. It pushes the air out and produces a flat, dense crust with none of the open crumb structure that makes wood-fired pizza special.
Hand-stretching preserves those bubbles. You work from the center out, letting gravity help, keeping the edge thicker to form the cornicione — the puffy, charred rim that's the hallmark of Neapolitan-style pizza. It takes practice, but it produces a fundamentally different crust.
How to Spot Good Dough
Look at the edge of the crust. If it's puffy with large, irregular air pockets and charred spots, the dough was well-fermented and hand-stretched. If the edge is flat and uniform, it was probably rolled or under-fermented.
From Dough Ball to Finished Pizza
After 48 hours, we portion the dough into balls and let them come to room temperature. Each ball gets stretched by hand into a round, loaded with toppings, and slid into the 800-degree oven on a wooden peel. Ninety seconds later, it comes out transformed — the crust puffed and spotted, the cheese bubbling, the edges charred.
The whole process from dough ball to finished pizza takes about 3 minutes. But those 3 minutes only work because of the 48 hours that came before them.
