The Caesar salad was invented in Tijuana, Mexico in the 1920s by Italian-American restaurateur Caesar Cardini. The original was a simple affair: whole romaine leaves, parmesan, croutons, and a dressing made tableside. Nearly a century later, most restaurants have reduced it to shredded iceberg lettuce, powdered parmesan from a can, and bottled dressing.
