A regular oven tops out around 500. Ours hits 800. At that temperature, the crust blisters in minutes — leopard-spotted char on the outside, soft and airy inside. The cheese bubbles and caramelizes. The toppings roast instead of steam.

The Dough
48 hours of slow fermentation
Our dough ferments for two full days before it touches the oven. The long, cold rise develops a complex, slightly tangy flavor with an open crumb structure you can't get from a shortcut. Hand-stretched to order — never rolled, never frozen.

Quattro formaggi is one of Italy's oldest pizza traditions, and it lives or dies on balance. Too much blue cheese and it overwhelms; too little and you taste only mozzarella. Forni's version calibrates all four — fresh mozzarella, whipped ricotta, aged parmesan, and gorgonzola — over a white sauce base instead of tomato, so nothing competes with the cheese.
The stone oven does the rest. At 800 degrees the mozzarella melts and pools, the parmesan crisps at the edges, and the ricotta stays cool-centered and creamy.
